Origins
In 2005, Vaughn Dell and Linda Morice took a bold step by purchasing the 2-hectare Golders Vineyard in Pipers Brook, Tasmania, and renaming it Sinapius. At just 24 years old, they envisioned Tasmania as the future hub for Australia’s finest cool climate Pinot Noir and Chardonnay. Over the years, they enriched the vineyard with updated clones of these Burgundian varietals, alongside new additions like Grüner Veltliner, Pinot Blanc, Pinot Gris, and Gamay.
Sinapius vineyards are meticulously close-planted, emulating the dense planting styles of Burgundy with 7,700 to 10,250 vines per hectare, focusing on low bunch weights and yields to maximise fruit intensity. This artisan approach extends throughout the viticulture process, from selective pruning to the attentive removal of excess grape 'ears' to ensure uniform ripeness.
With production capped at around 1,000 dozen, each bottle of Sinapius speaks to the intense, complex characteristics that have begun to earn the vineyard critical acclaim as one of Australia's rising stars in artisan wine production.
Tragically, Vaughn Dell's remarkable journey ended with the 2020 vintage. His enduring spirit lives on through his wife Linda, their daughters Esmé and Clementine, and the legacy of the Sinapius wines. Vaughn's visionary work has left an indelible mark, ensuring that his influence will continue to be felt for generations.
Cork Tasting Notes
This estate-grown Grüner Veltliner is a showcase of meticulous winemaking, starting from the careful crushing right through to its maturation in both large and small format oak barrels, and undergoing full malolactic fermentation. Bottled unfined and unfiltered in December 2021, it presents a complex bouquet of pretty herbs and ripe honeydew melon.
On the palate, it unfolds with a symphony of citrus and freshly cut pear, intertwined with mineral undertones. This wine is exquisitely balanced, featuring a creamy texture that carries through to a lingering, elegant finish. Each sip reflects the cool climate terroir of Tasmania, making it a distinguished example of what this varietal can achieve.
