For an astonishing eight generations, the Paillard family has produced and perfected their exceptional and unique Champagne. Currently, father Pierre and his sons Antoine and Quentin Paillard continue the tradition.
Domaine Pierre Paillard is eleven hectares of vineyard situated on the south side of the Montagne de Reims in the village of Bouzy. The vineyards are grown organically, and they use biodynamic practices to invigorate the vines. Extraordinarily, the entire vineyard of Domaine Paillard has the highest Champagne classification of Grand Cru.
The Paillard family owns 60% Pinot Noir and 40% Chardonnay grapes, blending Pinot Noir oriented Champagnes. The Paillards only use these ‘noble grape’ varieties and their entire production comes exclusively from their own vineyards.
The Bouzy Grand Cru Rosé is a blend of the 2016 vintage (80%) and some reserve wine (20%). The grape varieties used are Chardonnay accounting for 65% of the blend and Pinot Noir accounting for 35% of which 6% is added as red wine. In Bouzy at Pierre Paillard, the tradition is to blend their Champagne with some “Bouzy rouge”, a special cuvée of dry red wine made from the very qualitative Bouzy grapes. 6% of “Bouzy rouge” has been included into the blend providing a red fruit flavour that you can’t find anywhere else. - Importer Note
Tasting Notes
It is very elegant and aromatic. The nose is deep, delivering aromas of red fruit and some hints of flowers. The mouthfeel is silky and the bubbles are tiny and elegant. Drink now. - Importer Note
